Since these mornings have steadily grown colder as we hurtle down the slippery slope to winter, I have been craving something a little warmer and more satisfying than smoothies made with frozen banana. Yes oatmeal season is here, and what brings more feelings of comfort, warmth and satisfaction than apple pie with cream?
The oats gave me the hearty warming base I was looking for, and the cashew cream was the perfect accompaniment. It was thick like cream, but lighter while still adding a decent amount of protein to fill you up.
The stewed apply adds the perfect amount of sweetness without sugar, but you may wish to add a drop or two of organic Stevia to sweeten it up. I’m getting used to life without sugar now so it was perfect for me how it was.

- ½ C oats
- 1 C water
- 1 apple
- ½ t cinnamon
- water to cover
- 30g raw organic cashews
- ⅓ C water
- In one pot, add the oatmeal and water and bring to a boil, stirring occasionally to ensure it doesn't stick. Turn down to a slow simmer until cooked to your liking.
- Peel and core the apple, add to another pot with the cinnamon and water. Bring to a boil them reduce until almost all the water has evaporated.
- Blend the cashews with the water until a smooth cream forms. If you don't have a high powered blender, you may need to soak the cashews overnight, or bring them to a boil then simmer them for 10 minutes first.
- Add the oatmeal to a bowl, then top with the apples and cashew cream. Enjoy.
